  • Amberjack recipe?

    Does anybody have any good amberjack recipes I usually fry with blackened seasoning but I wanna try something different.

          I usally smoke and dip em. But on the smaller ones or almies (that are clean ) I like making fish and yellow rice. I make the rice on the stove top and cut the fish into cubes and season. When the rice is almost done, I drop em in and they cook quickly and stay firm. I make a side of fried plantain with the rice. Like grouper it's a fish that won't fall apart. Of course they are good as breaded or battered fingers.
