    nope! wouldn't last ten minutes in a restaurant kitchen[xx(]

    I like to eat and can't afford to pay someone to cook so i learned, mostly from helping cook at carnival association events and trial and error! having to eat your mistakes will make you a better cook in a hurry[]

    when Lisa and I got married neither of us could boil water!

    Funny wording isnt it, they call it salsa in the title and sauce in the recipe.

    I dont know Leo, the recipe has it listed just like this:

    1T. Pumpkin seeds (ground)

    and I copied the directions word for word. If I were to guess I would say if they meant toasted they would have said so?

    I can catch a striped bass, thats fo sho.

    Caribbean Red Snapper w/Spicy Fruit Salsa

    I was going through some files a few weeks ago and found this recipe I had cut out of a magazine. I have never tried it but thought my friends along the Gulf could maybe try it.

    It came from Blue Heron Pines Executive chef Charles Miller, what I was doing looking at a golf magazine I have no idea, probably in a Drs office.[B)]

    2 Red snapper Fillets, 8 oz

    1 Tablespoon Ground pumpkin seeds

    1 teaspoon Chili Powder

    1 Tablespoon Cumin

    1 teaspoon Oregano

    salt and pepper to taste, olive oil as needed

    Sauce:

    3 Tablespoons Tequila

    2 tablespoons triple Sec

    1 teaspoon Lime Juice

    1 teaspoon Diced onion

    1 teaspoon minced garlic

    3 tablespoons Butter

    Season pumpkin seeds and coat snapper fillets then pan sear in olive oil to mediun rare. Remove from pan. Add onion, garlic, tequila, triple sec and lime juice. Reduce by 1/3rd. Slowly incorporate butter to thicken. Pour over snapper fillets and serve.

    I brought this recipe to Destin but could not find a legal snapper.[]
