    Hey guys, my dad is bringing Over 12#'s of grouper filet for me. Need some good ideas as I will be having a lot of fish in the up coming weeks. Tomorrow night I'm going to do a grilled lemon butter....what's everyones favorite?

    I do a neopolitan with alot of fish...

    Yellow saffron rice on the bottom

    nice size piece of fish( grouper, cobia, mako, wahoo, mahi) - grilled, lemon pepper, blackened,)

    lay a nice pice of pepper jack cheese on top, put it under the broiler for a few minutes, just to melt the cheese.

    a dollop of sour cream on the top of the stack..

    spoonfull of home made salsa on top of that

    fresh steamed vegies on the side

    or bacon wraped chipotle style

    clean and dry the filet,

    wipe it down with store bought chipotle mayo

    dredge in old bay seasoning, blackening mix, or your favorite creole seasoning

    wrap in bacon strips

    I use stainless skewers, but a basket would work good too.

    Cook on high heat on the grill, itll smoke like hell, the bacon will burn, but the fish will be great. I works good for cobia, tilefish, grouper, trigger. The thicker the meat is the better.

      Blacken the grouper then serve it with bowtie pasta and a garlic marinara...
